Ingredients

6 cups shredded cabbage (about 1/2 head)

1 large carrot, cut into thin matchsticks

1 cup mandarin orange segments, drained

4 cups chopped romaine lettuce

1 red bell pepper, thinly sliced

1/2 cup plain rice vinegar (use unseasoned)

3 tablespoons sesame oil

2 tablespoons raw honey or date syrup

1 teaspoon sea salt

1 to 2 teaspoons chili sauce (such as sriracha)

1/4 cup sliced almonds, toasted

2 tablespoons sesame seeds, toasted
Instructions

In a large mixing bowl, combine shredded cabbage, carrot matchsticks, and mandarin oranges.

In a jar with a tight-fitting lid, combine rice vinegar, sesame oil, honey or date syrup, salt, and chili sauce. Shake well until fully blended.

Pour about half to three-quarters of the dressing over the cabbage mixture. Stir to coat, then refrigerate until ready to serve.

Keep chopped romaine and sliced red bell pepper separate to preserve their crispness.

In a dry skillet over medium heat, toast almonds and sesame seeds until golden brown and aromatic.

Just before serving, mix in romaine lettuce and red bell pepper. Top the salad with toasted almonds and sesame seeds.
