Description

Baked creamy gnocchi made with tender potato dumplings baked in a rich garlic cream sauce and topped with melted mozzarella and sharp cheddar cheese.

Ingredients

2 (17.6-ounce) packages potato gnocchi

2 1/2 cups heavy cream

2 cloves garlic, minced

1 (1-ounce) packet onion soup mix

1 1/2 cups shredded mozzarella cheese

1/2 cup shredded sharp cheddar cheese

Instructions

1. Preheat oven to 350°F.

2. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2–3 minutes. Drain well.

3. Transfer the drained gnocchi to a 9×13-inch baking dish.

4. In a medium bowl, whisk together the heavy cream, minced garlic, and onion soup mix.

5. Pour the cream mixture evenly over the gnocchi.

6. Bake uncovered for 30 minutes.

7. Remove from the oven, sprinkle mozzarella and cheddar evenly over the top, and return to the oven for 10 minutes, or until the cheese is melted, bubbly, and lightly golden.

8. Let rest for 5 minutes before serving. Serve warm.

Notes

Do not overcook the gnocchi during boiling.

For a richer flavor, add grated Parmesan before the final bake.

Letting the dish rest helps the sauce thicken before serving.
