Description
This baked pasta with mozzarella is a no-boil, one-dish vegetarian dinner made with penne, tomato sauce, spinach, and fresh mozzarella, baked until golden and bubbly.
Ingredients
1 (24-ounce) jar pasta sauce, plus extra if desired for serving
1 pound dry penne pasta
2 cups water, plus more if needed
1/2 tablespoon dried oregano
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1 teaspoon red pepper flakes
1 cup sliced mushrooms (optional)
2 cups fresh spinach
1 1/2 cups fresh mozzarella, sliced or torn
1/3 cup grated Parmesan cheese
Instructions
1. Preheat oven to 375°F.
2. In a 9×9-inch baking dish combine dry pasta, pasta sauce, and water. Stir to coat.
3. Add oregano, garlic powder, onion powder, red pepper flakes, mushrooms, and spinach. Mix well.
4. Cover tightly with foil and bake 30 minutes.
5. Check liquid and add 1/4 cup water or sauce if needed.
6. Top with mozzarella, cover, and bake another 30 minutes.
7. Remove foil and bake 10 minutes until cheese is melted and golden.
8. Rest 5 minutes before serving.
Notes
Ensure the dish is tightly covered during the first baking stage.
Add extra sauce when reheating to maintain moisture.
Use fresh mozzarella for the best texture.
