Ingredients
2 medium zucchini, sliced into 1/4-inch rounds
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
2/3 cup freshly grated Parmesan cheese
Instructions
1. Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly coat with nonstick cooking spray.
2. Place zucchini rounds in a large bowl, drizzle with olive oil, and toss gently to coat. Arrange in a single layer on the baking sheet.
3. In a small bowl, combine Parmesan, oregano, basil, garlic powder, salt, and pepper. Sprinkle evenly over zucchini.
4. Bake for 4 to 5 minutes until zucchini begins to soften.
5. Turn oven to broil and cook for another 4 to 5 minutes, watching carefully, until tops are golden and slightly crisp.
6. Remove from oven and cool for a few minutes before serving.
