Ingredients
1 cooked chicken breast, chopped or shredded
1/2 cup BBQ sauce
4 cups cooked rice
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn, thawed
1 small zucchini, diced
4 oz pepper jack cheese, shredded
2 green onions, sliced
1 small avocado, sliced
Instructions
1. In a bowl, combine the cooked chicken with 2 to 3 tablespoons of BBQ sauce, stirring until evenly coated.
2. Prepare the vegetables: dice the zucchini, slice the green onions and avocado, and shred the cheese if not already shredded.
3. To assemble each bowl, start with 1 cup of cooked rice.
4. Top each bowl evenly with the BBQ chicken, black beans, corn, zucchini, shredded cheese, green onions, and avocado slices.
5. Drizzle an additional tablespoon of BBQ sauce over each bowl before serving.
6. Serve warm or chilled, depending on your preference. Store in the fridge if preparing in advance.
