Description

Beef and Rice One Pan Dinner is a hearty, cheesy skillet meal made with lean ground beef, tender rice, tomatoes, and savory seasonings. Perfect for busy weeknights and easy family dinners.


Ingredients

1 tablespoon olive oil

1 pound lean ground beef

1 medium onion, chopped

1 green bell pepper, chopped

2 garlic cloves, minced

3/4 teaspoon salt

3/4 teaspoon black pepper

1 (14.5-ounce) can diced tomatoes with juices

1 1/2 cups low-sodium beef broth

1 cup uncooked long-grain white rice

2 tablespoons tomato paste

1 1/2 teaspoons Worcestershire sauce

1 cup shredded cheddar or Monterey Jack cheese

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the ground beef and press it into an even layer. Cook without stirring for 4 to 5 minutes, until browned on the bottom.

2. Add the chopped onion, bell pepper, garlic, salt, and black pepper. Break up the beef and cook, stirring occasionally, for 5 to 6 minutes until the meat is fully cooked and the vegetables are tender.

3. Stir in the diced tomatoes with their juices, beef broth, rice, tomato paste, and Worcestershire sauce. Increase heat to bring the mixture to a boil.

4. Once boiling, reduce heat to low, cover, and simmer for 20 to 25 minutes, or until the rice is tender and most of the liquid is absorbed.

5. Remove from heat and stir gently. Sprinkle shredded cheese over the top. Cover and let sit for about 2 minutes, until the cheese is melted.

6. Garnish with chopped parsley if desired and serve warm.

Notes

For a Mexican-inspired variation, add cumin and chili powder while browning the beef.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Add a splash of broth when reheating to keep the rice moist.
