This easy Beef Fried Rice comes together in just 20 minutes using ground beef, day-old rice, eggs, and a savory homemade sauce. Perfect for busy weeknights.
Ingredients
Sauce:
1 tablespoon dark soy sauce
2 teaspoons regular soy sauce
2 tablespoons oyster sauce
1/4 cup low-sodium chicken broth
1/2 teaspoon granulated sugar
1/8 teaspoon white or black pepper
Scrambled Eggs:
1 teaspoon sesame oil
2 large eggs, lightly beaten
Fried Rice:
2 tablespoons neutral cooking oil
1/2 medium onion, finely diced
2 garlic cloves, minced
8 ounces lean ground beef
2 cups frozen mixed vegetables (carrots, peas, corn)
3 cups cold, day-old cooked white rice
1/2 cup sliced green onions
Instructions
1. In a small bowl, stir together all sauce ingredients and set aside.
2. Heat sesame oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and gently scramble until just set. Transfer to a plate.
3. Add cooking oil to the same pan over high heat. Add diced onion and garlic, cooking for about 30 seconds until fragrant.
4. Add ground beef. Cook for about 2 to 3 minutes, breaking it apart, until no longer pink. Pour in 2 tablespoons of the prepared sauce and cook for 1 additional minute.
5. Stir in the frozen vegetables. Continue cooking for about 2 minutes, allowing the beef to brown and caramelize slightly for deeper flavor.
6. Add the cold rice and remaining sauce. Toss well for about 2 minutes, ensuring the rice is evenly coated and begins to lightly crisp.
7. Return the scrambled eggs to the pan along with the green onions. Toss briefly to combine. Serve immediately.
Notes
Use cold, day-old rice for best texture.
Cook over high heat to achieve light crisping.
Adjust soy sauce to taste if needed.
