Description

Tender marinated beef, crisp vegetables, and saucy noodles make this beef lo mein meal prep perfect for your weekly lunches. Quick, flavorful, and high in protein.


Ingredients

8 oz dry lo mein noodles or spaghetti

8 oz flank steak, thinly sliced against the grain

1 tablespoon low-sodium soy sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 tablespoon minced garlic

1 medium carrot, cut into matchsticks

3 cups broccoli florets

For the Sauce:

2 tablespoons soy sauce (or 1 tablespoon light soy sauce + 1 tablespoon dark soy sauce)

2 tablespoons hoisin sauce

1/4 cup brown sugar

1/2 teaspoon ground ginger

1 teaspoon sesame oil


Instructions

1. Cook the noodles according to the package directions. Drain and set aside.

2. In a bowl, combine the soy sauce and cornstarch, then mix in the sliced steak. Let it marinate for 5–10 minutes for extra tenderness.

3. In another bowl, stir together the sauce ingredients: soy sauce, hoisin sauce, brown sugar, and ground ginger.

4. Heat vegetable oil in a large skillet over medium-high heat.

5. Add the marinated beef and stir-fry for about 2 minutes until it’s browned.

6. Stir in the garlic, carrots, and broccoli. Cook for another 5 minutes until the vegetables are just tender.

7. Add the cooked noodles to the skillet. Pour in the sauce and toss everything together until evenly coated.

8. Drizzle with sesame oil before serving or storing.

Notes

Lo mein noodles can be substituted with spaghetti for convenience.

Store in airtight containers for up to 4 days in the refrigerator.

Reheat in the microwave with a splash of water for best texture.
