Ingredients

  • 6 tablespoons unsalted butter

  • 1 medium onion, chopped

  • 6 tablespoons all-purpose flour

  • 2 cups half and half

  • 6 cups low-sodium vegetable broth

  • 1 teaspoon salt

  • 1 teaspoon ground white pepper (or black pepper)

  • ¼ teaspoon ground nutmeg

  • 1 head broccoli (about 1 lb), chopped into small florets

  • 3 cups shredded cheddar cheese

  • 2 tablespoons chopped fresh parsley


Instructions

  • In a large pot over medium heat, melt the butter. Add chopped onion and sauté until it softens and starts to brown slightly.

  • Sprinkle the flour over the onion, whisking to combine with the butter. Cook for about 2 minutes, stirring constantly.

  • Slowly pour in the half and half while whisking to ensure a smooth texture. Gradually add the vegetable broth, whisking to remove any lumps and deglaze the pot.

  • Season with salt, pepper, and nutmeg. Bring to a gentle boil.

  • Add broccoli florets and simmer for about 10 minutes, or until tender.

  • Reduce heat to low and stir in 2 cups of the cheddar cheese, mixing until fully melted and smooth.
