6 cups low-sodium vegetable broth

¼ teaspoon ground nutmeg

1 head broccoli (about 1 lb), chopped into small florets

3 cups shredded cheddar cheese

2 tablespoons chopped fresh parsley
Instructions

In a large pot over medium heat, melt the butter. Add chopped onion and sauté until it softens and starts to brown slightly.

Sprinkle the flour over the onion, whisking to combine with the butter. Cook for about 2 minutes, stirring constantly.

Slowly pour in the half and half while whisking to ensure a smooth texture. Gradually add the vegetable broth, whisking to remove any lumps and deglaze the pot.

Season with salt, pepper, and nutmeg. Bring to a gentle boil.

Add broccoli florets and simmer for about 10 minutes, or until tender.
