Ingredients

1 large head of broccoli, chopped

1 medium yellow onion, chopped

3 garlic cloves, minced

3 tablespoons olive oil

2 tablespoons butter

1 tablespoon garlic powder

1 tablespoon salt

1 teaspoon red pepper flakes (optional)

1 sprig fresh thyme

4 cups vegetable broth

2 cups water

1 cup small pasta

1/2 lemon, juiced

Shaved Parmesan cheese

Freshly ground black pepper

Optional chopped fresh herbs


Instructions

1. Prepare the broccoli by cutting the florets into small pieces and chopping the stems.

2. Warm the olive oil and butter in a large pot over medium heat and sauté the onion for 2 minutes.

3. Add the broccoli stems and cook 2 minutes, then add florets and garlic.

4. Season with garlic powder, salt, and red pepper flakes; cook 2–3 minutes.

5. Pour in broth and water, add thyme, bring to a boil, then simmer 10–15 minutes.

6. Mash lightly or blend partially to maintain texture.

7. Stir in pasta and cook until al dente.

8. Finish with lemon juice, shaved Parmesan, olive oil, black pepper, and herbs.

Notes

Mash or blend more of the mixture for a creamier consistency. Adjust lemon to taste before serving.
