Description
A fresh, crunchy broccoli salad tossed in a creamy peanut lime dressing with edamame, herbs, and roasted peanuts. Ready in just 20 minutes.
Ingredients
For the Peanut Lime Dressing:
1/3 cup creamy peanut butter
3 tablespoons freshly squeezed lime juice
2 tablespoons soy sauce or tamari
2 tablespoons toasted sesame oil
2 garlic cloves, finely minced
2 teaspoons freshly grated peeled ginger
2 teaspoons honey or maple syrup
1 to 3 tablespoons water, as needed
1/4 teaspoon salt, or to taste
For the Salad:
2 cups frozen shelled edamame, thawed
1 1/2 pounds fresh broccoli crowns, cut into bite-sized florets
4 medium green onions, thinly sliced
1/3 cup chopped fresh cilantro
1/3 cup roasted salted peanuts or cashews, roughly chopped
1 medium jalapeño, finely chopped (optional)
Instructions
1. In a large mixing bowl, whisk together peanut butter, lime juice, soy sauce, sesame oil, garlic, ginger, and honey until smooth.
2. Add water one tablespoon at a time until dressing reaches a thick but pourable consistency. Season with salt.
3. Add broccoli florets, edamame, green onions, cilantro, nuts, and jalapeño.
4. Toss until everything is evenly coated.
5. Serve immediately or chill briefly before serving.
Notes
Adjust sweetness or lime juice to taste.
Chill for 30–60 minutes for deeper flavor.
Add raisins for a sweet variation.
Store leftovers refrigerated up to 2 days.
