Ingredients

8.5 oz salmon fillet

1 tsp garlic powder

1 tsp dried oregano

1 tsp paprika

1 tsp ground cumin

½ tsp sea salt

½ tsp cayenne pepper (optional)

½ tsp dried thyme
-
½ tsp onion powder

Pinch of sea salt and ground black pepper

½ cup couscous
-
1 tsp harissa paste
-
5.5 oz mixed salad greens

1 oz crumbled feta cheese

2 tbsp chopped fresh dill

Juice of ½ lemon
Instructions

In a small bowl, combine garlic powder, oregano, paprika, cumin, sea salt, cayenne pepper (if using), thyme, onion powder, and a pinch of salt and pepper.

Rub the spice mix evenly over the salmon fillets. Place them under a medium broiler and cook for about 10 minutes, or until the salmon is cooked through and the edges are crisp.

Place couscous in a heatproof bowl and add ½ cup boiling water. Stir briefly, cover, and let it sit for 5 minutes. Add harissa paste, then fluff with a fork to combine.

Divide the salad greens between two bowls. Drizzle with lemon juice and toss lightly.

Top each salad with fluffed couscous, then place the hot salmon fillet on top.

Sprinkle with crumbled feta and fresh dill before serving.
