Description

  • Cajun salmon salad is bold, fresh, and fast—spiced fish, greens, couscous & herbs.

Ingredients

  • 8.5 oz salmon fillet

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • 1 tsp paprika

  • 1 tsp ground cumin

  • ½ tsp sea salt

  • ½ tsp cayenne pepper (optional)

  • ½ tsp dried thyme

  • ½ tsp onion powder

  • Pinch of sea salt and ground black pepper

  • ½ cup couscous

  • 1 tsp harissa paste

  • 5.5 oz mixed salad greens

  • 1 oz crumbled feta cheese

  • 2 tbsp chopped fresh dill

  • Juice of ½ lemon


Instructions

  • In a small bowl, combine garlic powder, oregano, paprika, cumin, sea salt, cayenne pepper (if using), thyme, onion powder, and a pinch of salt and pepper.

  • Rub the spice mix evenly over the salmon fillets. Place them under a medium broiler and cook for about 10 minutes, or until the salmon is cooked through and the edges are crisp.

  • Place couscous in a heatproof bowl and add ½ cup boiling water. Stir briefly, cover, and let it sit for 5 minutes. Add harissa paste, then fluff with a fork to combine.

  • Divide the salad greens between two bowls. Drizzle with lemon juice and toss lightly.

  • Top each salad with fluffed couscous, then place the hot salmon fillet on top.

  • Sprinkle with crumbled feta and fresh dill before serving.
