Description
A creamy Southern-inspired chowder made with tender shrimp, sweet corn, and classic Cajun aromatics.
Ingredients
1 pound medium shrimp, peeled and deveined
2 teaspoons Cajun seasoning, divided
1 tablespoon olive oil
1 medium sweet onion, chopped
1 red bell pepper, chopped
1 celery rib, chopped
2 garlic cloves, minced
2 tablespoons all-purpose flour
4 cups low-sodium chicken broth
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 medium red potato, cubed
3 cups frozen corn
2/3 cup heavy cream
2 green onions, sliced
Instructions
1. Heat olive oil in a large Dutch oven over medium heat.
2. Season the shrimp with 1 teaspoon of Cajun seasoning and sauté for 2–3 minutes until pink; remove and set aside.
3. Add onion, bell pepper, and celery; cook 5 minutes.
4. Add garlic and cook 1 minute.
5. Stir in flour and cook 1 minute.
6. Slowly add the broth, whisking to avoid lumps.
7. Add remaining seasoning, thyme, black pepper, potatoes, and corn; simmer 15 minutes.
8. Stir in heavy cream and cook 2–3 minutes.
9. Return shrimp to the pot to warm through.
10. Serve hot, topped with green onions.
Notes
Use fresh shrimp for best texture. Adjust seasoning to taste. Add crawfish or crab for variation.
