A comforting pasta made with deeply caramelized onions, burst cherry tomatoes, fresh basil, and Parmesan cheese. Simple ingredients create a rich, balanced flavor perfect for an easy dinner.
Ingredients
2 sweet onions, thinly sliced
2 tablespoons butter
Salt, to taste
Black pepper, to taste
8 ounces pasta
3 garlic cloves, minced
2 cups whole cherry tomatoes
1/3 cup fresh basil, thinly sliced
1/4 cup finely grated Parmesan cheese
Extra basil, for serving
Extra shaved Parmesan cheese, for serving
Instructions
1. Melt the butter in a large skillet over medium-low heat.
2. Add the sliced onions along with a generous pinch of salt and black pepper. Cook, stirring often, for 25 to 35 minutes, until the onions become soft, deeply golden, and caramelized.
3. Near the end of the onion cooking time, bring a large pot of salted water to a boil. Cook the pasta according to the package directions, then drain.
4. Add the minced garlic and cherry tomatoes to the skillet with the onions. Cook for about 10 minutes, stirring often, until the tomatoes soften and start to burst.
5. Add the cooked pasta to the skillet and toss well to combine.
6. Stir in the basil and grated Parmesan cheese. Taste and add more salt and pepper as needed.
7. Serve right away with extra basil and shaved Parmesan on top.
Notes
Slow cooking the onions is essential for developing deep flavor.
Use sweet onions for the best caramelization.
Reserve a small amount of pasta water to loosen the sauce if needed.
