Description
A smooth, comforting soup made with roasted sweet potatoes, caramelized onions, and warm spices.
Ingredients
1 ½ pounds sweet potatoes, halved lengthwise
1 tablespoon olive oil
½ teaspoon salt
¼ cup unsalted butter, cubed
1 large sweet onion, sliced
1 ½ teaspoons fresh ginger, minced
1 garlic clove, minced
¼ teaspoon ground allspice
¼ teaspoon ground mace
⅛ teaspoon ground nutmeg
4 cups vegetable broth
Black pepper to taste
Instructions
1. Preheat oven to 350°F and line a baking sheet.
2. Brush sweet potatoes with oil and sprinkle with salt.
3. Bake cut side down until very soft.
4. Melt butter and cook onions covered until tender.
5. Uncover and cook until golden.
6. Add ginger, garlic, and spices.
7. Add sweet potatoes and broth, then simmer.
8. Blend until smooth and season to taste.
Notes
Blend in batches and adjust seasoning after blending for best results.
