Ingredients

  • 4 cups shredded carrots

  • 1 cup fresh pineapple chunks, sliced (drained canned pineapple works too)

  • ½ cup raisins (golden or regular)

  • ¼ cup plain Greek yogurt

  • ¼ cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons pure maple syrup


Instructions

  • In a small bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, and maple syrup until smooth and creamy. Set aside.

  • In a large mixing bowl, combine the shredded carrots, pineapple chunks, and raisins.

  • Pour the dressing over the carrot mixture and gently toss until everything is evenly coated.

  • Cover and refrigerate the salad for at least 30 minutes to allow the flavors to blend.
