Ingredients

4 cups shredded carrots

1 cup fresh pineapple chunks, sliced (drained canned pineapple works too)

½ cup raisins (golden or regular)

¼ cup plain Greek yogurt

¼ cup mayonnaise

2 tablespoons apple cider vinegar

2 tablespoons pure maple syrup
Instructions

In a small bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, and maple syrup until smooth and creamy. Set aside.

In a large mixing bowl, combine the shredded carrots, pineapple chunks, and raisins.

Pour the dressing over the carrot mixture and gently toss until everything is evenly coated.
