Description
A comforting tomato soup with soft biscuit-style dumplings filled with warm melted cheese, ready in minutes and perfect for a quick cozy meal.
Ingredients
1 can (6 oz) refrigerated flaky layer biscuits (5 biscuits total)
4 oz cheddar cheese or preferred cheese, cut into ½-inch cubes
1 quart tomato soup
Salt and pepper to taste
Instructions
1. Separate each biscuit into layers, then divide each layer in half to make four thin sections per biscuit.
2. Place a cheese cube in the center of each piece of biscuit dough, pinch the edges closed, and set aside.
3. Heat the tomato soup in a large soup pot over high heat, stirring regularly to prevent burning.
4. When the soup begins to boil, gently add the dumplings. Once they float to the top, cover the pot, reduce heat to low, and simmer for 5–10 minutes until the dough is fully cooked and the cheese is melted.
5. Season with salt and pepper before serving.
Notes
For extra flavor, stir in basil or add a splash of cream. The tomato base can be made ahead and frozen; add fresh dumplings when cooking.
