Ingredients

  • 1 can (15 oz) cannellini beans, drained

  • 1 large leek, finely sliced

  • 2 garlic cloves, thinly sliced

  • 1 teaspoon fresh rosemary, finely chopped

  • 1 teaspoon fresh thyme leaves

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 tablespoon butter

  • ¾ cup vegetable broth

  • ¼ cup shredded cheddar cheese

  • 2 tablespoons grated vegetarian pecorino cheese

  • Juice and zest of ½ a lemon

  • 2 tablespoons chopped fresh parsley


Instructions

  • In a saucepan, melt the butter over low heat.

  • Add the sliced leeks, garlic, thyme, and rosemary. Cook gently for 8 to 10 minutes until the leeks are tender and aromatic.

  • Stir in the beans, vegetable broth, salt, pepper, and cheddar cheese. Simmer for another 8 to 10 minutes, stirring occasionally.

  • Remove from heat and stir in the vegetarian pecorino, lemon juice, and zest. Adjust seasoning if needed.
