Ingredients

1 can (15 oz) cannellini beans, drained

1 large leek, finely sliced

2 garlic cloves, thinly sliced

1 teaspoon fresh rosemary, finely chopped

1 tablespoon butter

¾ cup vegetable broth

¼ cup shredded cheddar cheese

2 tablespoons grated vegetarian pecorino cheese

Juice and zest of ½ a lemon

2 tablespoons chopped fresh parsley
Instructions

In a saucepan, melt the butter over low heat.

Add the sliced leeks, garlic, thyme, and rosemary. Cook gently for 8 to 10 minutes until the leeks are tender and aromatic.

Stir in the beans, vegetable broth, salt, pepper, and cheddar cheese. Simmer for another 8 to 10 minutes, stirring occasionally.

Remove from heat and stir in the vegetarian pecorino, lemon juice, and zest. Adjust seasoning if needed.
