Description
A hearty one-skillet meal with seasoned ground beef, tender potatoes, peppers, and melted cheddar cheese.
Ingredients
1 tablespoon olive oil
1 tablespoon unsalted butter
1.8 pounds white starchy potatoes, peeled and sliced
2 bell peppers, sliced
1.1 pounds lean ground beef
1 yellow onion, chopped
2 garlic cloves, minced
1 teaspoon sweet paprika
1 teaspoon ground black pepper
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon crushed red pepper flakes
2 tablespoons tomato paste
2 tablespoons chopped parsley
2 cups vegetable broth
1½ cups shredded cheddar cheese
Instructions
1. Prepare all ingredients before cooking.
2. Brown potatoes in olive oil and butter, then set aside.
3. Cook peppers until softened.
4. Add beef and lightly brown.
5. Stir in onion, garlic, seasonings, and tomato paste.
6. Return potatoes and parsley to skillet.
7. Add broth, cover, and simmer until tender.
8. Uncover and reduce liquid.
9. Top with cheese, cover, and melt.
10. Garnish and serve hot.
Notes
Serve with a light salad for balance. Reheat gently with a splash of broth.
