Description

Cheesy Potato Bake is a creamy, oven-baked casserole made with tender potatoes, rich cream, garlic, thyme, and a golden melted cheese topping. Perfect as a comforting side dish or hearty addition to any meal.


Ingredients

2 1/2 pounds russet or Yukon Gold potatoes, peeled and cut into 3/4-inch cubes

2/3 cup whole or 2% milk

3/4 cup heavy cream

1/3 cup mayonnaise (or substitute 1/4 cup additional cream)

1 1/2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme), plus extra for garnish

2 large garlic cloves, minced

3/4 teaspoon salt

1/2 teaspoon freshly ground black pepper

2 cups shredded melting cheese (such as cheddar, Colby, or Monterey Jack)

1 cup shredded mozzarella cheese


Instructions

1. Preheat the oven to 350°F.

2. Place the cubed potatoes in a large mixing bowl.

3. Add the milk, heavy cream, mayonnaise, thyme, garlic, salt, pepper, and 2 cups of shredded cheese. Stir well to evenly coat the potatoes.

4. Transfer the mixture into a 3-quart baking dish (about 9-inch square). Spread evenly.

5. Cover tightly with foil and bake for 60 minutes, or until the potatoes are tender when pierced with a fork.

6. Remove the foil, sprinkle the mozzarella evenly over the top, and return to the oven.

7. Bake uncovered for an additional 25 minutes, or until the cheese is melted and golden brown.

8. Let the casserole rest for 5 to 10 minutes before serving. Garnish with additional thyme if desired.

Notes

For extra richness, use all heavy cream instead of milk.

Allow the casserole to rest before serving for cleaner slices.

Fresh thyme adds brightness, but dried thyme works well.

Store leftovers refrigerated for up to 4 days.
