Description
Cheesy potato bake made with tender potatoes, cream, garlic, thyme, and melted cheese baked until golden and bubbly.
Ingredients
2 1/2 pounds russet or Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
2/3 cup whole or low-fat milk
3/4 cup heavy cream
1/3 cup mayonnaise (or substitute 1/4 cup additional heavy cream)
1 1/2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme), plus extra for garnish
2 large garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cups shredded melting cheese (cheddar, Colby, or Monterey Jack)
1 cup shredded mozzarella cheese
Instructions
1. Preheat the oven to 350°F.
2. Place the cubed potatoes in a large mixing bowl.
3. Add the milk, heavy cream, mayonnaise, thyme, garlic, salt, pepper, and 2 cups shredded cheese. Stir until evenly combined.
4. Transfer mixture into a 3-quart baking dish and spread evenly.
5. Cover tightly with foil and bake for 60 minutes, until fork-tender.
6. Remove foil and sprinkle mozzarella evenly over the top.
7. Bake uncovered for 25 minutes, until cheese is melted and golden brown.
8. Let rest for 5–10 minutes before serving. Garnish with thyme if desired.

Yukon Gold potatoes provide a firmer texture while russets create a softer bake.
