This baked chicken parmesan delivers crisp texture, juicy chicken, and balanced flavor without frying.
Ingredients
4 boneless, skinless chicken breasts, halved lengthwise
3/4 cup seasoned breadcrumbs
1/4 cup grated Parmesan or Romano cheese
2 tablespoons melted butter or olive oil
3/4 cup part-skim shredded mozzarella cheese
1 cup marinara sauce
Cooking spray
Fresh basil or parsley for garnish
Instructions
1. Preheat oven to 450°F and coat a baking sheet with cooking spray
2. Mix breadcrumbs and grated cheese in a shallow bowl
3. Brush chicken with butter or olive oil and coat with breadcrumb mixture
4. Place chicken on baking sheet and lightly spray tops
5. Bake for 25 minutes until cooked through
6. Top with marinara and mozzarella
7. Bake 5 minutes until cheese is melted
8. Garnish and serve
