  • 1 small yellow onion, finely diced

  • 6 cups low sodium chicken broth

  • 1 bay leaf

  • 3/4 cup pastina (or other small pasta)

  • 1 cup cooked, shredded chicken breast

  • Salt and black pepper, to taste

  • Grated parmesan cheese (optional, for serving)


Instructions

  • Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté for 5–6 minutes, stirring occasionally, until the onion is soft and translucent.

  • Stir in the garlic and cook for about 30 seconds, until fragrant.

  • Pour in the chicken broth and add the bay leaf. Season with salt and pepper. Bring to a gentle boil over medium-high heat.
