6 cups low sodium chicken broth

1 bay leaf

3/4 cup pastina (or other small pasta)

1 cup cooked, shredded chicken breast

Salt and black pepper, to taste

Instructions

Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Sauté for 5–6 minutes, stirring occasionally, until the onion is soft and translucent.

Stir in the garlic and cook for about 30 seconds, until fragrant.

Pour in the chicken broth and add the bay leaf. Season with salt and pepper. Bring to a gentle boil over medium-high heat.

Add the pastina pasta. Lower the heat to maintain a gentle simmer. Stir occasionally to prevent the pasta from sticking. Cook until the pasta is tender, about 6–8 minutes.
