Description
A healthy, crustless take on chicken pot pie using roasted vegetables and simple seasoning.
Ingredients
2 medium zucchini, chopped into 1-inch pieces
1 pint cherry tomatoes
1 yellow bell pepper, chopped into 1-inch pieces
1 red onion, chopped into 1-inch pieces
2 to 3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Italian seasoning
Optional: garlic cloves
Instructions
1. Preheat oven to 425°F (218°C).
2. Chop vegetables into uniform pieces.
3. Toss vegetables with oil and seasoning.
4. Spread on baking sheet in one layer.
5. Roast 20–25 minutes until tender and caramelized.
6. Serve warm or store for later.
