Chicken Spinach Salad with Berries and Balsamic Dressing

Description

This Chicken Spinach Salad combines tender seasoned chicken, fresh berries, baby spinach, feta cheese, and a homemade balsamic dressing for a vibrant and healthy meal.


Ingredients

1 large boneless, skinless chicken breast (about 8 1/2 ounces)

1 tablespoon olive oil, divided

1 teaspoon all-purpose salt-free seasoning blend

Salt and black pepper, to taste

4 cups baby spinach, washed and dried

1/2 cup fresh blueberries

1/2 cup fresh strawberries, sliced

1/2 cup peeled clementine or mandarin orange segments

2 to 3 tablespoons crumbled feta cheese

2 to 3 tablespoons sliced almonds

Dressing:

1/4 cup olive oil

1 tablespoon balsamic vinegar

1/2 teaspoon Dijon mustard

1 1/2 teaspoons honey

1/4 teaspoon salt

1/8 teaspoon black pepper


Instructions

1. Pat the chicken dry with paper towels. Slice it in half horizontally for even cooking. Drizzle with about 2 teaspoons olive oil and season both sides with the seasoning blend, salt, and pepper.

2. Heat a large skillet or grill pan over medium heat and add the remaining olive oil. Cook the chicken for 4 to 5 minutes per side, or until the internal temperature reaches 165°F and the juices run clear. Remove from heat, cover loosely, and let rest for 5 to 10 minutes before slicing thinly.

3. In a small jar or bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until smooth and well combined.

4. Place the spinach in a large serving bowl. Toss lightly with a few tablespoons of the dressing.

5. Top with strawberries, blueberries, orange segments, sliced chicken, almonds, and feta cheese.

6. Drizzle additional dressing over the top as desired and gently toss before serving. Serve immediately.

Notes

For best texture, store dressing separately and assemble just before serving. Toast almonds lightly for extra flavor.
