Description

Ingredients

  • 2 cups chopped grilled chicken breast

  • 1 medium apple, diced

  • 2 celery stalks, diced

  • ¼ cup red onion, finely diced

  • 2 tablespoons chopped walnuts, toasted if desired

  • ¼ cup mayonnaise

  • ¼ cup plain Greek yogurt

  • 1 tablespoon lemon juice

  • 1½ teaspoons Dijon mustard

Instructions

  • Prepare Chicken: If not already cooked, grill chicken breast until fully done, then allow it to cool slightly. Chop into bite-sized pieces and measure out 2 cups.

  • Mix Ingredients: In a large bowl, combine the chicken, apple, celery, red onion, and walnuts.

  • Make Dressing: In a separate bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, and Dijon mustard until smooth.
