1 cup cooked, unsalted chickpeas (rinsed if canned)

1 cup grape tomatoes, halved

1 cup English cucumber, diced

1 ripe avocado, diced

Instructions

In a small bowl, whisk together the olive oil, lemon juice, oregano, pepper, and salt until well combined.

Divide the cooked farro evenly among four bowls, about 3/4 cup each.
