Ingredients
3 tablespoons olive oil
1 small onion, finely chopped
8 garlic cloves, roughly chopped
2 tablespoons all-purpose flour
1 teaspoon sweet smoked paprika
1 teaspoon dried oregano
1 cup low-fat milk
1 cup vegetable broth
2 cans chickpeas, drained and rinsed
1 handful chopped fresh spinach
2 tablespoons grated vegetarian-friendly cheese
2 teaspoons lemon juice
Sea salt and black pepper
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Add onion and garlic and cook until softened.
3. Stir in flour and cook briefly.
4. Add paprika, oregano, milk, and broth.
5. Simmer until slightly thickened.
6. Add chickpeas, salt, and pepper and cook gently.
7. Stir in spinach until wilted.
8. Finish with cheese and lemon juice.
Notes
Serve with rice or crusty bread. Reheat gently with extra liquid if needed.
