Ingredients

  • For the Salad:

    • 3 cups finely chopped romaine or iceberg lettuce

    • 2 cups shredded red cabbage

    • 2 cups cooked shredded chicken breast

    • 1/2 cup drained mandarin orange segments

    • 1 package instant ramen noodles, crushed (discard the seasoning)

    • 1/2 cup shredded carrot

    • 1/3 cup sliced green onions

    • 1/4 cup sliced almonds

    For the Dressing:

    • 3 tablespoons rice vinegar

    • 2 tablespoons honey

    • 1 tablespoon sesame oil

    • 1 tablespoon hoisin sauce

    • 2 tablespoons soy sauce

    • 1 teaspoon freshly grated ginger

    • 1 clove garlic, minced

    • 1/4 cup vegetable oil


Instructions

  • In a large mixing bowl, combine the lettuce, red cabbage, shredded chicken, mandarin oranges, crushed ramen noodles, carrots, green onions, and almonds. Toss gently to mix.

  • In a separate small bowl, whisk together the rice vinegar, honey, sesame oil, hoisin sauce, soy sauce, ginger, and garlic. While whisking, slowly pour in the vegetable oil to create a smooth dressing.

  • Right before serving, pour the dressing over the salad and toss until evenly coated.
