Ingredients

For the Salad:

3 cups finely chopped romaine or iceberg lettuce

2 cups shredded red cabbage

2 cups cooked shredded chicken breast

1/2 cup drained mandarin orange segments

1 package instant ramen noodles, crushed (discard the seasoning)

1/2 cup shredded carrot

1/3 cup sliced green onions

1/4 cup sliced almonds
For the Dressing:

3 tablespoons rice vinegar

2 tablespoons honey

1 tablespoon sesame oil

1 tablespoon hoisin sauce

2 tablespoons soy sauce

1 teaspoon freshly grated ginger

1 clove garlic, minced

1/4 cup vegetable oil

Instructions

In a large mixing bowl, combine the lettuce, red cabbage, shredded chicken, mandarin oranges, crushed ramen noodles, carrots, green onions, and almonds. Toss gently to mix.

In a separate small bowl, whisk together the rice vinegar, honey, sesame oil, hoisin sauce, soy sauce, ginger, and garlic. While whisking, slowly pour in the vegetable oil to create a smooth dressing.

Right before serving, pour the dressing over the salad and toss until evenly coated.
