For the Soup:

¾ cup uncooked white rice (jasmine, long grain, or medium grain)

3 stalks choy sum, chopped (stems and leaves separated)

8 oz firm white fish fillets, cut into 1-inch cubes

1 green onion, finely sliced

Instructions

Make the Broth: In a medium pot, combine chicken broth, water, soy sauce, oyster sauce, garlic, and ginger. Bring to a boil over high heat, then reduce to medium and simmer with the lid on for 5 minutes.

Add Rice: Stir in the rice and cook uncovered for about 10 minutes. The broth should bubble gently.

Cook Fish and Vegetables: Add the fish and choy sum stems. Cook for 2 more minutes.

Finish Soup: Remove the garlic and ginger pieces. Stir in the choy sum leaves, sesame oil, and white pepper. The leaves will wilt quickly.
