A smoky, hearty chili made with lean ground turkey, sweet potatoes, fire-roasted tomatoes, and warm spices. This comforting meal comes together quickly and works perfectly for weeknight dinners or meal prep.
Ingredients
1 tablespoon olive oil or avocado oil
1 pound lean ground turkey
1 cup diced yellow onion
3 garlic cloves, minced
1 can (28 ounces) diced fire-roasted tomatoes
1 medium sweet potato, peeled and cut into small cubes
2 cups vegetable broth
2 teaspoons chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 to 1/2 teaspoon chipotle powder, to taste
Salt, to taste
Black pepper, to taste
Optional toppings:
Chopped fresh cilantro
Diced avocado
Lime wedges
Instructions
1. Warm the oil in a large pot over medium-high heat.
2. Add the ground turkey and cook for about 5 minutes, breaking it into small pieces as it browns.
3. Stir in the onion and garlic. Cook for 8 to 10 minutes until the onion softens and the turkey is nearly cooked through.
4. Add the diced tomatoes, sweet potato, vegetable broth, chili powder, oregano, cumin, and chipotle powder.
5. Bring the mixture to a boil, then reduce the heat to medium-low.
6. Simmer uncovered for 10 to 15 minutes until the sweet potatoes are tender and the chili is hot and flavorful.
7. Season with salt and black pepper.
8. Serve with cilantro, avocado, and lime wedges if desired.
Notes
Adjust the chipotle powder depending on your preferred spice level.
The chili thickens slightly as it sits, making leftovers even more flavorful.
Store in the refrigerator for up to 4 days or freeze for longer storage.
