Ingredients

  • 1 tablespoon kosher salt (for boiling pasta)

  • 1 pound gemelli pasta

  • 1 cup cooked turkey bacon, chopped

  • 1 cup ranch dressing, plus more for drizzling

  • 3 hard-boiled eggs, roughly chopped

  • 1 cup cherry tomatoes, halved

  • 1 ripe avocado, chopped

  • 1/4 cup crumbled blue cheese

  • Freshly ground black pepper, to taste


Instructions

  • Bring a large pot of water to a boil and add the kosher salt. Cook the gemelli pasta according to the package instructions until al dente. Drain and transfer to a large mixing bowl.

  • While the pasta cooks, cook the turkey bacon in a skillet over medium heat until crispy. Let it cool slightly, then chop into bite-sized pieces.

  • Add the ranch dressing to the bowl with the warm pasta and toss until evenly coated.

  • Gently mix in the chopped eggs, cherry tomatoes, avocado, blue cheese, and cooked turkey bacon. Season with freshly ground black pepper.
