Description
Creamy Thai-inspired soup with coconut milk, lemongrass, ginger, and tender shrimp.
Ingredients
1 tablespoon vegetable oil
2 tablespoons fresh ginger, grated
1 stalk lemongrass, minced
1 teaspoon curry powder
1 tablespoon tomato paste
4 cups low-sodium chicken broth
3 tablespoons fish sauce
1 tablespoon brown sugar
1 can coconut milk
1/2 pound mushrooms, sliced
1 pound shrimp, peeled and deveined
2 tablespoons lime juice
1 green onion, chopped
1/4 cup cilantro, chopped
Instructions
1. Heat oil and cook ginger and lemongrass for 2 minutes.
2. Stir in tomato paste and curry powder and cook until fragrant.
3. Add broth gradually while stirring.
4. Add fish sauce and brown sugar and simmer 10 minutes.
5. Stir in coconut milk and simmer 5 minutes.
6. Add mushrooms and cook until tender.
7. Add shrimp and cook until pink.
8. Remove from heat and stir in lime juice.
9. Garnish and serve.
Notes
Do not overcook shrimp. Add spice if desired.
