Description
A Thai-inspired coconut-based seafood soup with fresh mussels, citrus, and warming spices.
Ingredients
1 stalk lemongrass
3 pounds fresh mussels, cleaned
2 tablespoons canola oil
1 medium yellow onion, chopped
4 garlic cloves, minced
1 1/2 tablespoons fresh ginger
1 cup orange juice
1/2 cup lime juice
2 teaspoons curry powder
1 teaspoon fresh thyme
1 bay leaf
2 cans unsweetened coconut milk
1 jalapeño, chopped
1 tablespoon chili paste
2 plum tomatoes, diced
Kosher salt
3 tablespoons fresh cilantro
Instructions
1. Simmer lemongrass in water and strain.
2. Steam mussels and reserve broth.
3. Sauté onion, garlic, and ginger.
4. Add broth, juices, spices, and coconut milk; simmer.
5. Add mussels and tomatoes, cook briefly.
6. Season and finish with cilantro.
Notes
Best served fresh. Adjust chili to taste.
