Ingredients

  • 12 ounces bowtie (farfalle) pasta
  • Salt, for boiling water
  • 1 cup mayonnaise
  • 2 tablespoons barbecue sauce
  • 2 tablespoons spicy brown mustard
  • 2 tablespoons taco seasoning
  • 1 tablespoon hot sauce
  • 1 pint cherry tomatoes, halved (about 2 cups)
  • 1 large bunch scallions, thinly sliced, plus extra for garnish
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn kernels, drained
  • 8 ounces sharp Cheddar cheese, cut into small cubes (about 1 1/2 cups)


Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the bowtie pasta and cook until al dente, following the package instructions. Drain and rinse under cold water to stop the cooking process.
  • Make the Dressing: While the pasta is cooking, whisk together the mayonnaise, barbecue sauce, spicy brown mustard, taco seasoning, and hot sauce in a large mixing bowl until smooth.
  • Combine Ingredients: Add the cooked and cooled pasta, cherry tomatoes, scallions, black beans, corn, and Cheddar cheese to the bowl with the dressing. Toss well until everything is evenly coated.
  • Chill and Serve: Serve immediately or cover the bowl and refrigerate for up to 4 hours to allow the flavors to meld. Garnish with additional scallions just before serving if desired.
