Description

A cozy, cheesy pasta bake made with tender cheese tortellini, fresh spinach, and marinara sauce—all topped with melty mozzarella and Parmesan. This dish comes together in 40 minutes and is perfect for weeknights or casual gatherings.


Ingredients

38 ounces (just under pounds) fresh or frozen cheese tortellini

3 cups marinara sauce

9 ounces fresh spinach leaves

½ cup grated Parmesan cheese

1¼ cups shredded mozzarella cheese

Fresh basil, thinly sliced, for garnish


Instructions

1. Preheat your oven to 350°F. Lightly grease a 13″ x 9″ baking dish with cooking spray and set aside.

2. Bring a large pot of salted water to a boil. Add the tortellini and cook for the shortest time recommended on the package. Drain and return to the pot.

3. Add the marinara sauce and spinach to the tortellini. Stir until well combined and the spinach just begins to wilt.

4. Transfer the mixture to the prepared baking dish, spreading it out evenly.

5. Sprinkle Parmesan and mozzarella evenly over the top.

6. Bake for 20 minutes, or until the cheese is melted and bubbling. For a golden finish, broil briefly until the cheese is lightly browned (if your dish is broiler-safe).

7. Garnish with fresh basil and serve warm.

Notes

If using frozen spinach, thaw and squeeze out excess moisture before adding. Feel free to add cooked sausage or shredded rotisserie chicken for a heartier version. This dish can be assembled ahead and refrigerated or frozen before baking.
