Ingredients
- 3 tablespoons unsalted butter
- 1 sweet onion, diced
- 3 carrots, peeled and diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- ½ teaspoon poultry seasoning
- Salt and pepper, to taste
- 1½ cups cooked, shredded chicken (boneless)
- 7 to 8 cups low-sodium chicken broth
- 1 cup uncooked stelline (tiny star-shaped pasta)
- 1 tablespoon fresh lemon juice
- 3 tablespoons chopped fresh parsley, plus extra for garnish
- Grated parmesan cheese, for serving
- Lemon wedges, for serving
Instructions
- In a large pot, melt the butter over medium-low heat. Add the onion, carrots, and celery. Season with salt and pepper. Sauté for about 8 minutes until vegetables soften.
- Stir in the minced garlic and poultry seasoning. Cook for another minute.
- Mix in the shredded chicken and pour in 7 cups of broth.
- Bring to a boil, then reduce heat to a simmer. Add the pasta and cook uncovered for about 8 minutes or until pasta is tender.
- Stir in lemon juice and chopped parsley. Taste and adjust seasoning with more salt and pepper if needed. Add the remaining cup of broth if you prefer a more brothy consistency.
