Ingredients
-
2 tablespoons olive oil
-
1 small white onion, diced
-
2 large carrots, diced
-
2 celery stalks, diced
-
4 garlic cloves, minced
-
1/4 cup all-purpose flour
-
5 cups low-sodium vegetable broth
-
1 pound Yukon gold potatoes, diced
-
1 pound boneless, skinless chicken breast, cut into small pieces
-
1 tablespoon curry powder
-
2 teaspoons garam masala
-
2/3 cup frozen green peas
-
1 (15-ounce) can full-fat coconut milk
-
Salt and black pepper, to taste
Instructions
-
Heat the olive oil in a large pot over medium-high heat. Add diced onion and cook for about 3 minutes, stirring occasionally.
-
Add carrots and celery, cooking for another 5 minutes. Stir in the garlic and cook for an additional 2 minutes.
-
Sprinkle the flour over the vegetables, stir well, and cook for 1 minute, stirring frequently.
-
Pour in the vegetable broth and add the diced potatoes, chicken, curry powder, and garam masala. Stir to mix everything evenly.
-
Bring the soup to a simmer. Lower the heat to medium-low and let it simmer for 10 to 15 minutes, or until the potatoes are soft. Stir occasionally to prevent sticking.
-
Stir in the green peas and coconut milk. Season with salt and pepper to your liking.
-
Serve hot, optionally with a side of bread or crackers.
