Ingredients

  • 2 tablespoons olive oil

  • 1 small white onion, diced

  • 2 large carrots, diced

  • 2 celery stalks, diced

  • 4 garlic cloves, minced

  • 1/4 cup all-purpose flour

  • 5 cups low-sodium vegetable broth

  • 1 pound Yukon gold potatoes, diced

  • 1 pound boneless, skinless chicken breast, cut into small pieces

  • 1 tablespoon curry powder

  • 2 teaspoons garam masala

  • 2/3 cup frozen green peas

  • 1 (15-ounce) can full-fat coconut milk

  • Salt and black pepper, to taste


Instructions

  • Heat the olive oil in a large pot over medium-high heat. Add diced onion and cook for about 3 minutes, stirring occasionally.

  • Add carrots and celery, cooking for another 5 minutes. Stir in the garlic and cook for an additional 2 minutes.

  • Sprinkle the flour over the vegetables, stir well, and cook for 1 minute, stirring frequently.

  • Pour in the vegetable broth and add the diced potatoes, chicken, curry powder, and garam masala. Stir to mix everything evenly.

  • Bring the soup to a simmer. Lower the heat to medium-low and let it simmer for 10 to 15 minutes, or until the potatoes are soft. Stir occasionally to prevent sticking.

  • Stir in the green peas and coconut milk. Season with salt and pepper to your liking.
