Ingredients
1 pound short pasta
4 tablespoons olive oil
1 pound chicken tenders
1 tablespoon Cajun seasoning
Salt and black pepper
1 medium yellow onion
2 bell peppers
3 garlic cloves
Crushed red pepper flakes
1 cup low-sodium chicken broth
1 cup milk
2 ounces cream cheese
1/2 cup grated Parmesan cheese
2 tablespoons fresh basil
Instructions
1. Cook pasta until al dente and set aside
2. Cook chicken with onion and seasoning until done
3. Cook peppers and garlic in remaining oil
4. Add broth, milk, and cream cheese to make sauce
5. Stir in cheese, chicken, and pasta
6. Finish with basil and serve
Notes
Adjust Cajun seasoning to control heat. Add milk when reheating to keep sauce creamy.
