Ingredients

5 large carrots, peeled and cut into 1/2-inch chunks

3/4 cup milk (any type)

Instructions

Heat the olive oil or butter in a large pot over medium-high heat.

Add the chopped onion and minced garlic. Sauté for about 2 minutes until the onion is soft and translucent.

Stir in the carrots, ensuring they are well coated with the oil or butter.

Pour in the vegetable broth. Bring the mixture to a gentle boil, then reduce the heat to maintain a steady simmer. Cover with a lid and cook for 20–25 minutes, or until the carrots are very tender.

Turn off the heat and use an immersion blender to puree the soup until smooth. Alternatively, let it cool slightly and blend in batches using a countertop blender.

Stir in the cream and milk. Season with salt and pepper to taste. If needed, adjust the consistency by adding more milk or a little water.
