Description

Creamy cheesy grits made with milk, broth, sharp cheddar, butter, and cream. This rich and comforting Southern side dish is ready in just 15 minutes and perfect for breakfast, brunch, or dinner.


Ingredients

2 cups whole milk (or 2% milk, water, or unsweetened plant-based milk)

2 cups chicken broth or vegetable broth

2 teaspoons kosher salt, divided

½ teaspoon black pepper

1 cup quick-cooking grits

4 ounces sharp cheddar cheese, freshly shredded (about 1 cup)

4 tablespoons unsalted butter

¼ cup heavy cream or half-and-half


Instructions

1. In a medium saucepan set over medium-high heat, combine the milk and broth. Bring the mixture to a gentle boil.

2. Once boiling, slowly whisk in the grits along with 1 teaspoon of the salt. Stir well to prevent lumps.

3. Reduce the heat to low, cover, and let simmer for about 10 minutes. Whisk every 2 to 3 minutes until the grits are thick and creamy.

4. Stir in the butter and shredded cheddar cheese. Continue cooking on low for 3 to 5 minutes, whisking frequently, until fully melted and smooth.

5. Remove from heat and whisk in the heavy cream. Season with the remaining salt and black pepper to taste.

6. Serve warm.

Notes

For extra flavor, use sharp cheddar and shred it fresh for better melting.

If the grits thicken too much, whisk in a splash of warm milk before serving.

For jalapeno cheese grits, stir in finely diced fresh jalapeños during the final minutes of cooking.
