Ingredients

2 medium zucchini, chopped into bite-sized pieces

2 cups cooked chicken, shredded or diced

1/2 cup sour cream (or plain Greek yogurt)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese


Instructions

1. Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish with oil or nonstick spray.

2. In a large mixing bowl, combine the zucchini, cooked chicken, sour cream, garlic powder, onion powder, salt, and black pepper. Stir until evenly coated.

3. Spread the mixture evenly into the prepared baking dish.

4. Sprinkle the mozzarella and Parmesan cheese evenly over the top.

5. Cover the dish tightly with foil and bake for 20 minutes.

6. Remove the foil and continue baking for 10 more minutes, or until the cheese is melted, golden, and bubbling.

Use rotisserie chicken for convenience.
