Description
Creamy pasta shells tossed with seasoned ground turkey, roasted zucchini, and cherry tomatoes in a smooth white-style sauce.
Ingredients
2 cups cherry tomatoes, halved
2 medium zucchini, chopped
1 lb ground turkey
1 lb pasta shells
5 oz cream cheese
Juice of half a lemon
1/2 cup grated hard cheese
Fresh basil, for serving
1 tbsp canola oil
1 tsp Italian seasoning
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
Salt and black pepper to taste
Instructions
1. Preheat oven to 356°F.
2. Spread zucchini and tomatoes on a baking sheet, season, and roast for 30 minutes, stirring halfway.
3. Brown ground turkey in oil over high heat for 5 minutes.
4. Lower heat, add spices, and cook 5 more minutes.
5. Cook pasta in salted water, stopping 2 minutes early. Reserve 1.5 cups pasta water.
6. Stir cream cheese into turkey until melted.
7. Add roasted vegetables, pasta water, and pasta.
8. Mix in lemon juice and half the cheese, cooking until sauce thickens.
9. Serve with basil and remaining cheese.
Notes
Add extra pasta water as needed to loosen the sauce. Reheat gently for best texture.
