Creamy mashed potatoes made with butter, cream cheese, and rich cream for the ultimate comforting side dish.
Ingredients
5 pounds russet or Yukon Gold potatoes, peeled and cut into evenly sized chunks
3/4 cup unsalted butter, plus 2 tablespoons for topping
8 ounces cream cheese, softened
1/2 cup half-and-half
1/4 cup heavy cream
1/2 to 1 teaspoon seasoned salt
2 teaspoons freshly ground black pepper
1/2 teaspoon kosher salt, plus more to taste
Instructions
1. Place the peeled and cut potatoes in a large pot and cover with water. Bring to a gentle boil over medium-high heat. Cook for 30 to 35 minutes, or until very tender.
2. Drain thoroughly and return potatoes to the dry pot over low heat for 2 to 3 minutes to remove excess moisture.
3. Turn off heat. Add butter, cream cheese, half-and-half, and heavy cream. Mash until smooth and creamy.
4. Stir in seasoned salt, black pepper, and kosher salt. Adjust seasoning to taste.
5. Transfer to a baking dish and dot with remaining butter.
6. Warm in a 350°F oven for 20 to 30 minutes until heated through and butter is melted.
Notes
Drying the potatoes after draining prevents watery texture.
Soften cream cheese before adding for smoother blending.
This dish can be prepared ahead and reheated before serving.
