Creamy Mushroom Rice – The Ultimate Comforting One-Pot Side

Description

Creamy Mushroom Rice is a rich, one-pot vegetarian side dish made with sautéed mushrooms, garlic, onion, and tender long-grain rice finished with sour cream.


Ingredients

1 pound fresh mushrooms, sliced

1 medium onion, finely chopped

3 garlic cloves, minced

2 cups long-grain white rice

4 cups vegetable broth

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons sour cream

1 tablespoon butter

2 tablespoons chopped green onions, for garnish


Instructions

1. Heat butter in a large skillet over medium heat. Add mushrooms and cook until browned and tender. Remove and set aside.

2. In the same skillet, cook chopped onion until soft. Stir in garlic and cook 30 seconds.

3. Add rice and vegetable broth. Season with salt and pepper and stir well.

4. Bring to a gentle simmer. Cover partially and cook 18–20 minutes until rice is tender and liquid is absorbed.

5. Stir mushrooms and sour cream into rice. Remove from heat, cover fully, and steam 5 minutes.

6. Fluff with a fork and garnish with green onions before serving.

Notes

For deeper flavor, use cremini mushrooms.

Add spinach or peas for extra color and nutrition.

Reheat with a splash of broth to maintain moisture.
