A rich, comforting one-pan chicken dish with spinach and a silky cream sauce.
Ingredients
1 medium yellow onion, thinly sliced
4 garlic cloves, finely chopped
1 pound boneless, skinless chicken breasts
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour
2 tablespoons olive oil
1/2 cup low-sodium chicken broth
1/2 cup heavy cream
1/4 cup sour cream
1 tablespoon soy sauce
1 teaspoon apple cider vinegar
1/4 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1 tablespoon unsalted butter
5 ounces baby spinach
Instructions
1. Season and flour chicken.
2. Sear chicken in olive oil and set aside.
3. Whisk broth, cream, sour cream, soy sauce, vinegar, and spices.
4. Cook onion, garlic, and red pepper flakes in butter.
5. Add sauce and simmer until thickened.
6. Stir in spinach until wilted.
7. Return chicken and simmer until cooked through.
Notes
Serve over pasta or rice. Reheat gently for best texture.
