Description
This creamy potato soup is the ultimate comfort food—rich, smooth, and full of flavor. Made with gold potatoes, sour cream, and a touch of ancho chili powder, it’s perfect for chilly nights or family dinners. This vegetarian one-pot meal is easy to prepare and even easier to love.
Ingredients
3 tablespoons butter (unsalted or salted)
1 medium yellow onion, chopped (about 1½ cups)
3 large garlic cloves, minced
⅓ cup all-purpose flour
2½ pounds gold potatoes, peeled and diced into 1-inch pieces (about 6 large potatoes)
4 cups vegetable broth
2 cups milk
⅔ cup heavy cream
1½ teaspoons salt (adjust to taste)
1 teaspoon ground black pepper
¼ to ½ teaspoon ancho chili powder (optional, to taste)
⅔ cup sour cream
Optional toppings: shredded cheddar cheese, chopped chives, extra sour cream
Instructions
1. In a large Dutch oven or soup pot, melt the butter over medium heat.
2. Add the chopped onion and sauté for 3–5 minutes until soft and translucent.
3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
4. Sprinkle the flour over the mixture and stir until a smooth paste forms.
5. Add the diced potatoes, vegetable broth, milk, heavy cream, salt, pepper, and ancho chili powder (if using). Stir to combine.
6. Bring the soup to a boil, then reduce to a simmer. Cook until the potatoes are fork-tender, about 10 minutes.
7. Carefully transfer about half of the soup to a blender and puree until smooth (or use an immersion blender directly in the pot).
8. Return the pureed soup to the pot and stir in the sour cream until well combined.
9. Let the soup simmer for another 15 minutes to thicken and blend flavors.
10. Serve hot with optional toppings like shredded cheese, chives, or extra sour cream.
Notes
For extra flavor, sauté the onions until deeply golden before adding garlic and flour.
To make it spicier, increase the ancho chili powder or add a pinch of cayenne.
Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
