Description

A Scandinavian-inspired creamy salmon soup finished with fresh lemon and dill.


Ingredients

8 cups cold water

Skin from 1 lb salmon fillet

2 bay leaves

1–2 teaspoons dill seeds or fennel seeds

6 whole allspice berries

4 tablespoons butter

1 medium yellow onion, diced

¾ pound baby potatoes, halved

1 bulb fennel, diced

4 carrots, sliced

1 pinch saffron threads

¼ teaspoon ground allspice

1 cup heavy cream

3–4 tablespoons lemon juice

1 lb salmon fillet, cut into chunks

Salt and black pepper

Fresh dill


Instructions

1. Simmer salmon skin, water, bay leaves, seeds, and allspice for 15 minutes. Strain.

2. Sauté onion in butter, then add potatoes, fennel, and carrots.

3. Add broth, saffron, and ground allspice. Simmer until vegetables are tender.

4. Stir in cream, lemon juice, and salmon. Cook gently until salmon is just done.

5. Season and rest briefly before serving with dill.

Notes

Add lemon gradually and avoid boiling after cream is added.
