Description

Creamy Spinach Bake is a rich and cheesy baked spinach dish made with cream cheese, garlic, and Parmesan. Perfect as an easy vegetable side dish for weeknights or holidays.


Ingredients

3 (10-ounce) packages frozen chopped spinach

2 tablespoons unsalted butter

1/4 cup finely chopped shallots

2 to 3 large garlic cloves, minced

6 ounces cream cheese, softened to room temperature

1 teaspoon kosher salt, plus additional to taste

1/4 teaspoon red pepper flakes

1/4 teaspoon freshly ground black pepper

2 tablespoons plain breadcrumbs

2 tablespoons grated Parmesan cheese


Instructions

1. Preheat oven to 375°F. Thaw spinach and squeeze out as much moisture as possible.

2. Melt butter in a saucepan over medium heat. Cook shallots 3–5 minutes until softened.

3. Add garlic and cook 20 seconds until fragrant.

4. Stir in drained spinach, cream cheese, salt, red pepper flakes, and black pepper until smooth.

5. Transfer mixture to baking dish and spread evenly.

6. Top with breadcrumbs and Parmesan cheese.

7. Bake 10–15 minutes until heated through and lightly golden. Serve warm.

Notes

Drain spinach thoroughly to prevent excess moisture.

You can add shredded mozzarella or Gruyère for extra cheesiness.

Store leftovers in the refrigerator for up to 3 days.
