Description

Creamy Spinach Potatoes are a rich and comforting side dish made with fluffy mashed potatoes, sautéed spinach, butter, cream, cream cheese, and shredded cheese.


Ingredients

3 pounds Yukon Gold or Russet potatoes, peeled and diced

1 cup heavy cream, warmed

1/3 cup unsalted butter, melted

4 ounces cream cheese, softened

1/2 teaspoon salt (plus more to taste)

1/4 teaspoon black pepper

1/2 teaspoon garlic paste or minced garlic

2 cups shredded cheese (cheddar or mozzarella)

6 ounces fresh spinach (or frozen spinach, thawed and drained)

1 tablespoon olive oil


Instructions

1. Wash, peel, and cut the potatoes into evenly sized chunks.

2. Place potatoes in a large pot and cover with water by about 1 inch. Add a pinch of salt.

3. Bring to a boil over high heat, then reduce to a gentle boil. Cover and cook for 15–20 minutes, or until fork-tender.

4. Heat olive oil in a skillet over medium heat. Add spinach and cook until wilted. Drain if needed.

5. Drain the cooked potatoes and return them to the warm pot. Mash until smooth.

6. Stir in butter, cream cheese, heavy cream, garlic, shredded cheese, sautéed spinach, salt, and pepper. Mix until creamy.

7. Taste and adjust seasoning as needed. Serve warm.

Notes

Make sure frozen spinach is fully thawed and well drained before using.

Warm the cream before mixing to keep the potatoes smooth.

Reheat gently with a splash of cream to maintain texture.
